- Slice 1 carrot

Step 1.
Place the ham bone, chopped onion, chopped celery, green split peas, salt, and pepper in a large pot. Add enough cold water to cover the ingredients by about 2 inches.

Bring the pot to a boil over high heat, then reduce the heat to low, cover, and simmer for about 3 hours, stirring occasionally to prevent sticking.

About 20 minutes before serving, remove the ham bone from the pot and stir in the sliced carrot. Continue simmering uncovered until the carrot is tender, about 20 minutes.
