Let's Cook

  1. Step 1.

    Preheat the oven to 300°F.

  2. Step 2.

    In the bowl of a stand mixer fitted with the whisk attachment, beat 2 egg whites until frothy and doubled in volume, about 2 minutes.

    Add 1 pound pecan halves (4 cups) to the beaten egg whites and toss to coat evenly.

    In a medium bowl, thoroughly mix ½ cup packed dark brown sugar, ½ teaspoon ground cinnamon, ½ teaspoon ground cumin, ½ teaspoon kosher salt, ¼ teaspoon cayenne, ¼ teaspoon ground cloves, and ¼ teaspoon freshly grated nutmeg.

  5. Step 5.

    Pour the spice mixture into a paper sack. Add the egg-coated pecans, fold the top of the sack, and shake vigorously to coat the pecans evenly.

  6. Step 6.

    Spread the coated pecans in a single layer on a baking sheet. Bake until darkened in color and fragrant, 20 to 25 minutes, stirring and rotating the sheet halfway through.

  7. Step 7.

    Let the pralines cool completely on the baking sheet, about 30 minutes. Then pack into cellophane bags, a ziplock bag, or a lidded jar; they keep for up to 10 days.
