- 3 tablespoons olive oil
- 3 large garlic cloves, thinly sliced
- (1 dried red chile pepper)
- Salt and black pepper

Cook in a large pot of boiling salted water: 12 ounces dried spaghetti or linguine or 1 pound fresh

Meanwhile, heat in a large skillet over medium heat: 3 tablespoons olive oil

Add and cook, stirring, until fragrant, about 2 minutes: 3 large garlic cloves, thinly sliced; (1 dried red chile pepper)

Discard the chile pepper, if used. Reserve ½ cup of the pasta water. Drain the spaghetti, add the hot pasta to the skillet along with the pasta water, and toss to combine. Season to taste with: Salt and black pepper
