Southern-Style Deep-Fried Catfish

Ingredients
- 1½ to 2 pounds catfish fillets, patted dry
- 2 inches vegetable oil such as peanut or canola
- 1 cup fine cornmeal
- (1 tablespoon chili powder)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 Hushpuppies (opens in new tab)
- 1 Tartar Sauce (opens in new tab)
- Lemon wedges

Step 1.
Have ready: 1½ to 2 pounds catfish fillets, patted dry

Step 2.
Heat to 350°F in a deep-fryer, deep heavy pot, or Dutch oven over medium-high heat: 2 inches vegetable oil such as peanut or canola

Mix together in a wide shallow dish: 1 cup fine cornmeal; (1 tablespoon chili powder); 1 teaspoon salt; ½ teaspoon black pepper

Dredge the fish fillets in the cornmeal mixture, pressing it on so it adheres to the fish. Carefully lower the fish one fillet at a time into the hot oil, without crowding. Cook the fish in batches if necessary—it will not take long. Gently stir once or twice to keep the fillets from sticking. Remove the fillets when they are golden brown, 4 to 5 minutes, and drain on paper towels. Serve immediately with: Hushpuppies; Tartar Sauce; Lemon wedges
