Sourdough CAKE
These quick-to-make cake doughnuts use sourdough starter for a tangy flavor and tender texture. They are fried until golden and perfect for a sweet treat.

Step 1.
In the bowl of a stand mixer fitted with the paddle attachment, combine the sifted flour, superfine sugar, baking powder, salt, and freshly grated nutmeg or allspice. Blend on low speed until combined.

Add the sourdough starter and room-temperature butter or vegetable shortening to the flour mixture. Blend on medium-low speed until the mixture resembles coarse sand, about 30 seconds.

In a small bowl, whisk together the egg, milk, yogurt, and vanilla extract until smooth.

With the mixer on medium speed, slowly pour the wet ingredients into the flour mixture. Mix until just combined, then scrape down the sides of the bowl and mix for 20 seconds.

Add water, 1 tablespoon at a time, mixing on medium speed after each addition, until the batter sticks to the sides of the bowl. The batter should be smooth, thick, and pipeable, similar to moist cookie dough.

Cover the bowl with a towel or plastic wrap and let the batter rest at room temperature for 30 minutes. Meanwhile, heat oil for frying in a deep pot or fryer to 350°F (175°C).

After the rest, pipe and fry the doughnuts according to the directions for Basic Cake Doughnuts: pipe rings or drop spoonfuls into the hot oil, frying until golden brown on both sides, about 1-2 minutes per side. Drain on paper towels.
