Let's Prepare

Collect

Gather these ingredients - no prep needed yet.

  • 1 can northern or white beans
  • 29.6 ml freshly squeezed lemon juice
  • 1.23 ml kosher salt
  • 1.23 ml coarse ground black pepper
  • 59.1 ml extra-virgin olive oil
  • flaky sea salt

Prepare

  • Chop 59.1 ml red onion
  • Crush 1 clove garlic
  • Chop 1.23 ml fresh thyme

Let's Cook

  1. Step 1.

    Preheat the smoker to 225°F using applewood or any fruitwood.

  2. Step 2.

    In a small smoker-safe dish, add the beans along with the liquid from the can. Smoke for 3 hours, stirring every 30 minutes, until the liquid has mostly evaporated and the beans look dry.

  3. Step 3.

    Remove the beans from the smoker and let cool slightly.

  4. Step 4.

    In a food processor, combine the smoked beans, chopped red onion, lemon juice, crushed garlic, kosher salt, black pepper, and fresh thyme. Pulse to combine.

  5. Step 5.

    With the food processor running, slowly drizzle in the olive oil and continue to pulse until the mixture is smooth and creamy, similar to hummus. If the dip is too thick, add more olive oil or up to 1 tablespoon of lemon juice as needed.

  6. Step 6.

    Transfer the dip to a serving bowl. Garnish with a drizzle of good-quality olive oil and a sprinkling of flaky sea salt. Serve with crackers and vegetables.
