  • 4.93 ml coarse black pepper
  • 2.46 ml red pepper flakes
  • 907 g salmon fillets, boneless and skinless
  • 29.6 ml liquid smoke

Prepare

Let's Cook

  1. Step 1.

    In a large ziplock bag, combine 2 tablespoons dark brown sugar, 1 tablespoon granulated sugar, 1 tablespoon onion powder, 1 tablespoon garlic powder, 1 teaspoon kosher salt, 1 teaspoon coarse black pepper, and ½ teaspoon red pepper flakes. Seal the bag and shake to mix the dry ingredients well.

  2. Step 2.

    Add 2 pounds boneless, skinless salmon fillets to the bag, then drizzle in 2 tablespoons liquid smoke. Seal the bag and shake gently to coat the salmon evenly with the seasoning mixture. Place the bag in the refrigerator and marinate for 8 hours.

  3. Step 3.

    Preheat the oven to 350°F. Lightly grease a 9-by-13-inch baking dish with vegetable oil and line it with parchment paper.

  4. Step 4.

    Remove the salmon from the refrigerator. Take the fillets out of the bag and arrange them in the prepared baking dish. Discard the bag. Bake the salmon uncovered for 20 to 25 minutes, until the fish flakes easily with a fork and is cooked through.

  5. Step 5.

    Remove the dish from the oven and let the salmon cool for about 5 minutes. Serve with lemon wedges.
