  • 1/4 cup your favorite barbecue rub
  • 1/2 cup mayonnaise
  • 1 tbsp fresh lemon juice
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1 tsp hot sauce
  • 1/2 tsp celery seeds
  • Kosher salt and freshly ground black pepper
  • 1 light smoking wood

Prepare

  • Halve 1 whole chicken
  • 3/4 cup celery, finely chopped
  • 1/3 cup scallion, finely sliced

Let's Cook

  1. Step 1.

    Rub the chicken all over with barbecue rub, coating evenly.

  2. Step 2.

    Fire up your smoker or grill to 225°F (107°C). Once at temperature, add chunks of smoking wood and wait until the wood is ignited and producing smoke.

    Place the chicken in the smoker or grill, skin side up. Smoke until an instant-read thermometer inserted into the thickest part of the thigh reads 160°F (71°C), about 1 1/2 to 2 hours.

  4. Step 4.

    Remove the chicken from the smoker and let it cool completely, about 1 hour.

  5. Step 5.

    While the chicken is cooling, make the dressing: in a small bowl, combine mayonnaise, celery, scallions, lemon juice, vinegar, paprika, hot sauce, and celery seeds. Stir until well mixed.

  6. Step 6.

    Once the chicken is cool, pull the meat from the skin and bones, then roughly chop the meat. Discard the skin and bones.

  7. Step 7.

    Place the chopped chicken in a large bowl and pour the dressing over it. Stir to combine. Season with salt and pepper to taste.

    Serve immediately or store in an airtight container in the refrigerator for up to 3 days.
