Let's Cook

  1. Step 1.

    Heat the vegetable oil in a wok over medium-high heat until shimmering, about 1 minute. Add the sliced onion and cook, stirring occasionally, until golden brown, 10 to 12 minutes.

    Sprinkle the flour over the cooked onions and stir constantly until the flour is fully incorporated and no white streaks remain, about 1 minute. This forms the base for the gravy.

  3. Step 3.

    Add the bay leaves, minced garlic, chicken stock, ham hock pieces, and collard greens to the wok. Season with salt, black pepper, and red pepper flakes to taste. Stir to combine.

  4. Step 4.

    Reduce the heat to medium-low and partially cover the wok. Simmer, stirring occasionally, until the greens are tender, the ham is falling off the bone, and the gravy has thickened, at least 3 hours (or up to 4 hours for deeper flavor).

  5. Step 5.

    Serve the collard greens and ham hock gravy hot, accompanied by corn bread or hot buttered biscuits.
