Gather these ingredients - no prep needed yet.

  • 1 lb shrimp
  • 3 tsp salted butter
  • 1/2 lb ricotta
  • 3 eggs
  • 3 tsp locatteli or parmesean cheese
  • 1/4 tsp red pepper flakes
  • 5 tsp unsalted butter
  • 2/3 cup Vodka
  • 3/4 cup heavy cream
  • 1 pureed or crushed tomatoes

Prepare

  • Mince 2 clove garlic
  • Chop Fresh chopped Parsley
  • Mince 2 clove garlic
  • Chop 1/4 cup fresh parsley

Let's Cook

  1. Step 1.

    Cook shrimp in butter and garlic until pink; drain and puree in food processor.

  2. Step 2.

    In a medium bowl, combine pureed shrimp with ricotta, eggs, Locatelli or Parmesan cheese, and fresh chopped parsley; set aside.

  3. Step 3.

    In a saucepan, melt butter and sauté garlic and red pepper flakes until garlic is cooked, being careful not to burn it.

  4. Step 4.

    Add vodka and simmer for 2 minutes.

  5. Step 5.

    Add tomatoes, parsley, and cream; simmer for 5-10 minutes.

  6. Step 6.

    Season with salt to taste and serve with ravioli.
