Gather these ingredients - no prep needed yet.

  • 3 cup water
  • 2 tsp kosher salt
  • 3/4 cup quick grits
  • 2 tbsp extra-virgin olive oil
  • 1 tsp minced garlic
  • 1/4 cup chopped green onions
  • 2 tsp Cajun seasoning
  • 1/2 tsp ground black pepper
  • 3 tbsp salted butter

Prepare

  • 1/2 lb andouille sausage, cut into ½-inch-thick slices
  • 1/2 lb large raw shrimp, peeled and deveined

Let's Cook

  1. Step 1.

    In a medium saucepan over high heat, combine 3 cups water and 2 teaspoons kosher salt. Bring to a boil, then immediately reduce the heat to medium. Stir the water and gradually sprinkle in ¾ cup quick grits while stirring constantly. Cook the grits, stirring frequently, until they thicken and become creamy, about 30 to 35 minutes.

  2. Step 2.

    While the grits are cooking, heat 2 tablespoons extra-virgin olive oil in a large skillet over medium-high heat. Add ½ pound andouille sausage slices and cook until browned, 5 to 7 minutes, stirring occasionally.

  3. Step 3.

    Add ½ pound peeled and deveined large raw shrimp, 1 teaspoon minced garlic, and ¼ cup chopped green onions to the skillet with the sausage. Sprinkle with 2 teaspoons Cajun seasoning and ½ teaspoon ground black pepper. Cook for 5 more minutes, stirring occasionally, until the shrimp are pink and cooked through. Turn off the heat.

  4. Step 4.

    Once the grits have thickened, stir in 3 tablespoons salted butter until melted and incorporated.

  5. Step 5.

    Divide the grits among serving plates. Spoon the sausage, shrimp, and onion mixture over the grits. Garnish with additional chopped green onions.
