A copycat omelette from Salty's in West Seattle, filled with shrimp, crab, mushrooms, spinach, and creamy Havarti cheese. The seafood keeps the eggs well seasoned, and the cheese adds extra creaminess.

Step 1.
In a small mixing bowl, combine 4 eggs and 3 tablespoons heavy cream. Beat until well combined. Season with kosher salt and black pepper to taste, then mix again. Set aside.

Drizzle 1 tablespoon olive oil into a large nonstick pan over medium heat. When the oil shimmers, add ¼ cup sliced mushrooms and ¼ cup fresh spinach. Cook, stirring occasionally, until the mushrooms are tender and the spinach has wilted, about 2–3 minutes. Transfer the cooked vegetables to a plate and set aside.

Pour the egg mixture into the same pan over medium heat. Cook undisturbed for 2 minutes, until the edges are set and the bottom is lightly golden. Sprinkle ¼ cup cooked shrimp meat, ¼ cup lump crab meat, ¼ cup shredded Havarti cheese, and the reserved mushrooms and spinach evenly over one half of the omelette.

Fold the omelette in half over the filling using a spatula. Cook for 2 more minutes, until the cheese is melted and the eggs are fully set. Slide the omelette onto a plate and serve immediately.
