Let's Prepare

Collect

Gather these ingredients — no prep needed yet.

  • 3 large egg whites
  • 2.46 ml cream of tartar
  • 454 g confectioners' sugar
  • gel food coloring

Let's Cook

  1. Step 1.

In a large bowl, using an electric mixer on medium-high speed, whisk the egg whites and cream of tartar until foamy, about 1 minute.

  2. Step 2.

Reduce the mixer speed to low and gradually add the confectioners' sugar, beating until just incorporated. Then increase the speed to high and beat until medium-stiff glossy peaks form, 5 to 7 minutes.

  3. Step 3.

If coloring the icing, separate it into bowls and tint each with gel food coloring. Transfer each color to a separate piping bag fitted with a fine tip.
