4 servings Cutting cauliflower heads into wedges creates large, flat surfaces, allowing them to brown better than florets. Preheat the oven to 425°F. For easier cleanup, line a rimmed baking sheet with parchment paper.

  • 1 large head cauliflower (about 2 pounds)
  • 2 tablespoons vegetable oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1
    • 1 cup packed fresh parsley leaves
    • ½ cup extra-virgin olive oil
    • 3 tablespoons drained capers
    • (Up to 6 anchovy fillets)
    • 2 garlic cloves, chopped
    • 1 tablespoon red wine vinegar or lemon juice
    • ½ teaspoon whole-grain mustard
    • (½ teaspoon red pepper flakes)
    • Salt to taste
    Sub-recipe steps
    1. Combine in a food processor: 1 cup packed fresh parsley leaves; ½ cup extra-virgin olive oil; 3 tablespoons drained capers; (Up to 6 anchovy fillets); 2 garlic cloves, chopped; 1 tablespoon red wine vinegar or lemon juice; ½ teaspoon whole-grain mustard; (½ teaspoon red pepper flakes); Salt to taste
    2. Blend to a uniform consistency, but do not process to a puree. Adjust the seasonings. The sauce will keep, covered and refrigerated, for up to 1 week. Serve at room temperature.

  • 2 tablespoons vegetable oil

  • 1 Salsa Verde, Chimichurri, Romesco Sauce, a vinaigrette, Nuoc Cham, or Beurre Blanc using lemon juice instead of vinegar

    Cut lengthwise into 8 large wedges: 1 large head cauliflower (about 2 pounds)

  2. Step 2.

    Place them on the baking sheet. Any small florets that fall off can be roasted alongside the wedges. Drizzle them with: 2 tablespoons vegetable oil

  3. Step 3.

    Sprinkle on all sides: ½ teaspoon salt; ¼ teaspoon black pepper

  4. Step 4.

    Roast, flipping once, until browned on both sides and tender, about 40 minutes. Serve with: Salsa Verde, Chimichurri, Romesco Sauce, a vinaigrette, Nuoc Cham, or Beurre Blanc using lemon juice instead of vinegar
