  • 14.8 ml red wine vinegar
  • 14.8 ml honey

  • 4 bratwurst sausages

Prepare

  • Mince 2 clove garlic
  • 2 large sweet-tart apples, halved, cored, and thickly sliced
  • 1 large head radicchio, cored and thickly sliced
  • 1 small red onion, thickly sliced
  • 1 can great northern or cannellini beans, rinsed and drained
  • Chop 29.6 ml fresh parsley

Let's Cook

  1. Step 1.

    Preheat the oven to 425°F.

  2. Step 2.

    In a small bowl, whisk together 2 tablespoons extra-virgin olive oil, 2 tablespoons stone-ground mustard, 1 tablespoon red wine vinegar, 1 tablespoon honey, and 2 minced garlic cloves until well combined.

  3. Step 3.

    In a 10-inch oven-safe skillet, toss together the sliced apples, sliced radicchio, sliced red onion, and most of the vinaigrette (reserve a little for the bratwurst). Season with salt and pepper to taste.

  4. Step 4.

    Pierce 4 bratwurst sausages a few times with a fork. Nestle the bratwurst into the skillet among the vegetables and drizzle with the remaining vinaigrette.

  5. Step 5.

    Roast in the oven for about 40 minutes, flipping the bratwurst once halfway through, until the sausages are browned and cooked through and the vegetables are tender and caramelized.

  6. Step 6.

    Remove the skillet from the oven, stir in 1 can (15 oz) rinsed and drained great northern or cannellini beans, and return to the oven. Roast until the beans are warmed through, about 5 minutes more.

  7. Step 7.

    Carefully remove the skillet from the oven. Sprinkle with 2 tablespoons chopped fresh parsley and serve with additional mustard on the side.
