  • 473 ml sugar
  • 118 ml cocoa powder
  • 29.6 ml cocoa powder
  • 4.93 ml salt
  • 9.86 ml baking soda
  • 4.93 ml baking powder
  • 237 ml vegetable or canola oil
  • 237 ml milk
  • 237 ml cold coffee
  • 2 eggs
  • 4.93 ml vanilla

Let's Cook

  1. Step 1.

    Preheat the oven to 350°F. Grease two 8-inch round cake pans with butter or nonstick spray.

  2. Step 2.

    In a large bowl, whisk together 2 cups flour, 2 cups sugar, ½ cup plus 2 tablespoons cocoa powder, 1 teaspoon salt, 2 teaspoons baking soda, and 1 teaspoon baking powder until well combined.

  3. Step 3.

    In a separate bowl, whisk together 1 cup vegetable or canola oil, 1 cup milk, 1 cup cold coffee, 2 eggs, and 1 teaspoon vanilla until smooth.

  4. Step 4.

    Pour the wet ingredients into the dry ingredients and stir with a spatula or whisk until just combined and no dry streaks remain. Do not overmix.

  5. Step 5.

    Divide the batter evenly between the prepared cake pans. Bake for 40 to 50 minutes, until a toothpick inserted into the center comes out clean.

  6. Step 6.

    Let the cakes cool in the pans on a wire rack for 10 minutes, then turn them out onto the rack to cool completely before frosting or serving.
