A bright raspberry sorbet made from pureed and strained berries, sugar, water, and a touch of lemon or lime juice. Optional framboise or vodka keeps it soft and scoopable.

Gather these ingredients - no prep needed yet.
- 1 ½ pints raspberries
- 1 cup sugar
- ½ cup water
- 1 tablespoon lemon or lime juice
- (1 tablespoon framboise or vodka)

Step 1.
Combine in a blender: 1 ½ pints raspberries; 1 cup sugar; ½ cup water

Puree, then strain through a fine-mesh sieve into a medium bowl, pressing firmly to extract as much juice as possible; discard the seeds. Stir in: 1 tablespoon lemon or lime juice; (1 tablespoon framboise or vodka)

Refrigerate the sorbet base until cold, overnight if possible, or quick-chill in an ice water bath.

Taste and add more sugar or lemon juice if needed, stirring until the sugar is completely dissolved, 2 to 3 minutes. Pour the base into an ice cream maker and freeze as directed. Serve immediately or transfer to a container with a tight-fitting lid and freeze.
