Step 1.
In a large saucepan over medium heat, combine 1¼ cups granulated sugar, 1 cup light brown sugar, 7 tablespoons salted butter, and ½ cup half-and-half. Cook, without stirring, until the mixture reaches 240°F on a candy thermometer, then let it boil for about 5 minutes without stirring.

After the 5 minutes, remove the saucepan from the heat. Stir in 1 tablespoon vanilla extract, then add 1½ cups chopped pecans and fold them in with a wooden spoon. Continue stirring the candy mixture until it thickens, about 2–3 minutes.

Spoon the thickened candy mixture onto parchment paper in 9 equal portions. Let the pralines cool completely, about 30 minutes, before serving.
