Step 1.
Pat the pork chops dry with paper towels, then season both sides generously with salt and pepper.

Heat a large frying pan over medium-high heat. If the chops are very lean, add a little oil to the pan. Place the chops in the hot pan and let them brown in their own fat for 2 to 3 minutes per side, until a golden crust forms.

Reduce the heat to low, cover the pan, and cook the chops until they are tender and cooked through, about 10–15 minutes depending on thickness. Serve with applesauce or mint jelly.

For Pork Chops Hawaiian: In a bowl, combine 1 cup vinegar, ½ cup soy sauce, 1 cup brown sugar, 2 tablespoons mustard powder, 6 minced garlic cloves, and 2 tablespoons minced ginger. Place the pork chops in a dish, pour the marinade over them, cover, and refrigerate overnight.

Preheat the oven to 375°F. Remove the chops from the marinade and place them in a baking dish. Bake for 40 minutes, until the chops are tender and caramelized.

While the chops bake, sauté pineapple rings in butter in a skillet over medium heat until golden, then sprinkle with brown sugar and cook until the sugar melts. Serve the baked chops topped with the sautéed pineapple rings.
