- 2 pounds English or garden pea pods (about 2 cups shelled, or one 10-ounce package frozen peas)
- 3 tablespoons olive oil
- 24 pearl onions, peeled, (or use thawed frozen pearl onions)
- 3 tablespoons water
- 4 ounces prosciutto or ham, finely diced
- (1 to 2 teaspoons water, if using fresh peas)
- Salt and black pepper to taste

Heat in a large skillet over medium heat: 3 tablespoons olive oil

Add and brown lightly, shaking the skillet occasionally: 24 pearl onions, peeled, (or use thawed frozen pearl onions)

Add: 3 tablespoons water

Cover and cook over medium-low heat until the onions are tender, about 5 minutes. Stir in the shelled or frozen peas along with: 4 ounces prosciutto or ham, finely diced; (1 to 2 teaspoons water, if using fresh peas); Salt and black pepper to taste

Cover and cook until the peas are tender, 5 to 8 minutes for fresh peas, 3 to 5 minutes for frozen.
