  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Four 6-ounce boneless skate wings
  • 3 tablespoons butter
  • 3 tablespoons butter
  • 2 tablespoons drained capers
  • 1 tablespoon white wine vinegar
  • Minced parsley

Let's Cook

  1. Step 1.

    Preheat the oven to 200°F. Thoroughly whisk together on a plate: 1 cup flour; 1 teaspoon salt; ½ teaspoon black pepper

  2. Step 2.

    Dredge in the flour mixture: Four 6-ounce boneless skate wings

  3. Step 3.

    Heat a skillet large enough to hold the skate in a single layer over medium-high heat. Add and melt until the foam subsides: 3 tablespoons butter

  4. Step 4.

    Add the skate and brown on both sides, 2 to 3 minutes per side; the skate is done when you can begin to separate the segments. Transfer to a platter and keep warm in the oven. Wipe out the skillet and return to medium heat. Cook: 3 tablespoons butter

  5. Step 5.

    until the milk solids fall to the bottom of the skillet and turn dark brown, then remove from the heat and stir in: 2 tablespoons drained capers; 1 tablespoon white wine vinegar

  6. Step 6.

    Let sizzle about 10 seconds. Pour the sauce over the skate and garnish with: Minced parsley
