    • (1 teaspoon to 1 tablespoon red pepper flakes)
    • 1 teaspoon fennel seeds, lightly crushed, or ½ teaspoon ground fennel

Prepare Country Sausage I or II, substituting the following mixture for the ice/water, salt, herbs, and spices: 2 tablespoons red wine; 4 garlic cloves, minced; 1 tablespoon dried oregano; (2 teaspoons dried sage or basil); 2 teaspoons salt; 1 ½ teaspoons black pepper; (1 teaspoon to 1 tablespoon red pepper flakes); 1 teaspoon fennel seeds, lightly crushed, or ½ teaspoon ground fennel

  • 1 large bunch broccoli rabe, trimmed and chopped

  • 1 1 pound store-bought Italian sausage, removed from its casings, or homemade
  • 3 large garlic cloves, minced
  • ¼ teaspoon red pepper flakes
  • 1 large bunch broccoli rabe, trimmed and chopped
  • Salt and black pepper
  • 1 pound orecchiette or cavatelli
  • Grated Romano

Let's Cook

  1. Step 1.

    Heat in a large skillet over medium heat: 1 tablespoon olive oil

  2. Step 2.

    Add: 1 pound store-bought Italian sausage, removed from its casings, or homemade

  3. Step 3.

    Cook, breaking up the meat with a spoon, until nicely browned, about 8 minutes. Stir in and cook for 1 minute: 3 large garlic cloves, minced; ¼ teaspoon red pepper flakes

  4. Step 4.

    Stir in: 1 large bunch broccoli rabe, trimmed and chopped

  5. Step 5.

    Cover and cook just until tender, about 5 minutes. Season to taste with: Salt and black pepper

  6. Step 6.

    Meanwhile, cook in a large pot of boiling salted water: 1 pound orecchiette or cavatelli

  7. Step 7.

    Reserve ½ cup of the pasta water. Drain the pasta, add to the skillet along with the pasta water, and toss over low heat. Serve sprinkled with: Grated Romano
