Prepare

Let's Cook

  1. Step 1.

    Prepare the Carrot All-Purpose Egg Dough according to the instructions on the referenced page, or set out 60 store-bought dumpling skins.

  2. Step 2.

    Fill a small pot halfway with water, bring to a boil over high heat, then remove from heat. Add 4 pieces of dried tangerine peel and fully submerge them under a smaller lid or plate. Steep for about 30 minutes, until soft. Remove the peel from the pot and mince it.

  3. Step 3.

    While the tangerine peel steeps, in the bowl of a food processor, pulse 2 pounds of skinless, boneless chicken thighs (cut into 1½- to 2-inch pieces) in 1 or 2 batches, 20 to 30 times per batch, until coarsely ground. Alternatively, mince the chicken by hand into a chunky paste.

  4. Step 4.

    In a large bowl, whisk together ½ cup freshly squeezed orange juice, the minced tangerine peel, ¼ cup soy sauce, 1 to 2 tablespoons homemade sambal (or 1 tablespoon store-bought), 2 tablespoons toasted sesame oil, 1 tablespoon Shaoxing wine, 2 tablespoons light brown sugar, 1 tablespoon cornstarch, and 2 to 3 teaspoons kosher salt and ½ to ¾ teaspoon black pepper to taste.

  5. Step 5.

    Add the ground chicken, 3 cloves minced garlic, 1 heaping tablespoon minced fresh ginger, and 3 to 4 thinly sliced scallions to the bowl. Mix with your hands or a spoon until all ingredients are fully and evenly incorporated. Cover and refrigerate for at least 30 minutes before using.
