Let's Cook

  1. Step 1.

    In a cocktail shaker, muddle the peeled and sliced ginger and coriander stalks together to release their flavors.

  2. Step 2.

    Add the gin, lime juice, and gomme to the shaker, then fill with ice cubes. Shake vigorously for about 6 seconds until well chilled.

  3. Step 3.

    Fill a collins glass to the top with crushed ice. Strain the cocktail into the glass, then add tonic water to taste (about 125ml/4fl oz). Garnish with a slice of fresh ginger and a lime wedge.
