Let's Cook
-
Step 1.
Prepare the Sweet Potatoes Preheat the oven to 220°C / 425°F . Cut the sweet potato into 2–3 cm cubes. Place the cubes in a bowl and season with smoked paprika, garlic powder, rosemary or thyme, salt and black pepper. Add approximately half of the butter or olive oil and toss until evenly coated. Spread the potatoes on a baking tray in a single layer. Roast for 25–35 minutes , turning halfway through, until golden on the outside and tender inside.
-
Step 2.
Cook the Steak Remove the steak from the refrigerator approximately 20–30 minutes before cooking . Pat dry with kitchen paper and season both sides with salt and black pepper. Heat a heavy frying pan or cast-iron skillet over high heat. Add the remaining butter or olive oil. Place the steak in the hot pan and cook for approximately 3–5 minutes per side , adjusting the cooking time according to the thickness of the steak and your preferred doneness. Add the minced garlic during the final 1–2 minutes of cooking. Remove the steak from the pan and allow it to rest for 5–10 minutes before slicing.
-
Step 3.
Steam the Broccoli Steam the broccoli florets for approximately 5–7 minutes , or until tender while still retaining some bite. Season with salt and black pepper. Add a squeeze of lemon juice if desired.
-
Step 4.
Serve Place the roasted sweet potatoes and steamed broccoli on the plate. Slice the rested steak across the grain and serve alongside the vegetables. Pour any remaining steak resting juices over the sliced meat before serving. Approximate Nutrition per Serving Calories: ~1,200 kcal Protein: ~90–100 g Carbohydrates: ~85–95 g Fat: ~50–60 g Nutrition will vary depending on the steak cut, the amount of fat trimmed and whether butter or olive oil is used. Meal Prep Notes The sweet potatoes and broccoli can be prepared in advance and refrigerated in airtight containers. For the best texture, cook the steak fresh. If preparing the entire meal ahead of time, slightly undercook the steak so it does not become overcooked when reheated. Store refrigerated for up to 3 days .
