About 1 cup This Cuban table sauce is briefly cooked to bring out the full flavor of the garlic. Serve with grilled beef, chicken, pork, or fish, or use as a marinade for any of these. Mojo is best served fresh, but the sauce will keep, covered and refrigerated, for up to 3 days.

  • ½ cup olive oil
  • 8 garlic cloves, minced
  • 1 cup sour orange juice, or ½ cup orange juice and ½ cup lime juice
  • 1 tablespoon minced fresh oregano or 1 teaspoon dried oregano
  • ¾ teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Gather these ingredients - no prep needed yet.

  • ½ cup olive oil
  • 8 garlic cloves, minced
  • 1 cup sour orange juice, or ½ cup orange juice and ½ cup lime juice
  • 1 tablespoon minced fresh oregano or 1 teaspoon dried oregano
  • ¾ teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Let's Cook

  1. Step 1.

    Heat in a medium saucepan over medium heat: ½ cup olive oil

  2. Step 2.

    Add and cook until fragrant but not browned, 20 to 30 seconds: 8 garlic cloves, minced

  3. Step 3.

    Carefully stir in and bring to a boil: 1 cup sour orange juice, or ½ cup orange juice and ½ cup lime juice; 1 tablespoon minced fresh oregano or 1 teaspoon dried oregano; ¾ teaspoon ground cumin; ½ teaspoon salt; ¼ teaspoon black pepper

  4. Step 4.

    Reduce the heat to simmer gently for 10 minutes. Let cool and serve at room temperature.
