MJ’S Chipped BEEF ON Toast

- Toast 4 slices thick white bread

Step 1.
In a large skillet over medium-high heat, melt ½ cup (1 stick) butter. When the butter starts to bubble, whisk in ½ cup all-purpose flour to make a roux. Cook for 2 to 3 minutes, stirring constantly, until the roux starts to smell nutty and turns a light golden color.

Slowly whisk in 3½ cups whole milk, pouring in a steady stream while whisking to prevent lumps. Bring the gravy to a simmer, then cook for 3 to 4 minutes, stirring occasionally, until thickened enough to coat the back of a spoon.

Add 2 tablespoons Worcestershire sauce, 2 teaspoons hot sauce (such as Texas Pete or Crystal), 2½ teaspoons kosher salt, and ½ teaspoon freshly ground black pepper. Stir to combine, then taste and adjust seasoning if needed.

Reduce the heat to low. Add 10 ounces thinly sliced bresaola or other cured beef to the gravy, stirring gently to coat. Keep warm over low heat while you toast the bread.

Toast 4 to 6 slices thick white bread (such as shokupan or Texas toast) until golden brown. Place one slice on each serving plate.
