Melon Baskets Or Fruit Cups

Fresh melon halves or a watermelon basket filled with a colorful mix of oranges, peaches, pineapple, blueberries, and melon balls, lightly sweetened and optionally spiked with orange liqueur or rum. A refreshing, make-ahead summer fruit dessert.

Ingredients

Servings:
  • 4 cantaloupes or 1 large watermelon
  • 2 cups sliced peeled oranges, seeded or seedless
  • 2 cups sliced peeled peaches or hulled strawberries
  • 2 cups diced pineapple, fresh or canned
  • 1 cup blueberries or sliced peeled kiwi
  • 1 to 2 cups reserved melon balls
  • (Sugar to taste)
  • (1 tablespoon orange liqueur or rum [½ cup total])

Let's Prepare

Collect

Gather these ingredients - no prep needed yet.

  • 4 cantaloupes or 1 large watermelon
  • 2 cups sliced peeled oranges, seeded or seedless
  • 2 cups sliced peeled peaches or hulled strawberries
  • 2 cups diced pineapple, fresh or canned
  • 1 cup blueberries or sliced peeled kiwi
  • 1 to 2 cups reserved melon balls
  • (Sugar to taste)
  • (1 tablespoon orange liqueur or rum [½ cup total])

Let's Cook

  1. Step 1.

    Have ready: 4 cantaloupes or 1 large watermelon

  2. Step 2.

    Cut a thin slice off both ends of the cantaloupes or the bottom of the watermelon to keep them from wobbling, then halve the cantaloupes or cut the watermelon into a basket, as shown below. Remove the seeds. Using a melon baller, remove and reserve 1 to 2 cups of the flesh for the baskets or cups. Store the leftovers in the refrigerator for another use. Scallop the edges of the baskets or cups and chill.

  3. Step 3.

    Combine the following ingredients: 2 cups sliced peeled oranges, seeded or seedless; 2 cups sliced peeled peaches or hulled strawberries; 2 cups diced pineapple, fresh or canned; 1 cup blueberries or sliced peeled kiwi; 1 to 2 cups reserved melon balls; (Sugar to taste)

  4. Step 4.

    Chill thoroughly. Just before serving, fill the melons with the fruit. If desired, pour over each cantaloupe half (or pour the total amount over the watermelon): (1 tablespoon orange liqueur or rum [½ cup total])
