  • 1 large orange flavored gelatin
  • 473 ml boiling water
  • 1 frozen orange juice
  • 237 ml crushed pineapple with juice
  • 2 mandarin oranges
  • 1 large instant lemon pudding mix

Let's Cook

  1. Step 1.

    In a large bowl, dissolve 1 package (6 oz) orange-flavored gelatin in 2 cups boiling water. Stir until completely dissolved, about 2 minutes.

    Add 1 can (12 oz) frozen orange juice concentrate to the gelatin mixture. Stir until the concentrate is fully melted and incorporated.

    Pour the mixture into a 9x13-inch pan. Refrigerate until set, about 2-3 hours, or until firm to the touch.

    While the first layer sets, drain 2 small cans (about 11 oz each) mandarin oranges, reserving the liquid. Also drain 1 cup crushed pineapple, reserving the juice.

  5. Step 5.

    In a medium bowl, combine the drained pineapple (with its juice), the drained mandarin oranges, and 1 package (3.4 oz) instant lemon pudding mix. Stir until the pudding mix is fully incorporated and the mixture thickens slightly.

  6. Step 6.

    Once the first gelatin layer is fully set, spoon the lemon-pudding mixture evenly over the top. Spread gently to cover. Refrigerate for at least 1 hour before serving.
