Let's Cook

  1. Step 1.

Reheat the lemon-garlic chicken, cooked rice, and roasted mixed vegetables until hot. You can do this in the microwave or on the stovetop; ensure the chicken reaches an internal temperature of 165°F (74°C) if reheating from cold.

  2. Step 2.

While the chicken, rice, and vegetables are reheating, prepare the bowl: place the spinach in the bottom of a large bowl, then add the cooked rice on top, spreading it evenly.

  3. Step 3.

Once the chicken and vegetables are hot, arrange them separately over the rice, along with the cucumber. Keep the components in distinct sections for a colorful presentation.

  4. Step 4.

Drizzle the lemon-herb protein yogurt over the bowl, then drizzle with olive oil and squeeze fresh lemon juice to taste.

  5. Step 5.

Finish by sprinkling chopped parsley and freshly ground black pepper over the top. Serve immediately.
