Loaded Baked Potato Dip
This loaded baked potato dip combines all the classic toppings of a baked potato into a creamy, cheesy dip. Serve with potato chips for a crowd-pleasing appetizer.

- 7 jumbo baking potatoes
- 1 1/2 cup sour cream
- 1/2 cup salted butter softened
- 1/4 lbs cream cheese
- 2 cup shredded cheddar cheese
- 8 thick-cut bacon cooked and crumbled

- 7 jumbo baking potatoes
- 1 1/2 cup sour cream
- 1/4 lbs cream cheese
- 2 cup shredded cheddar cheese

Prepare
- Soften 1/2 cup salted butter
- 8 thick-cut bacon, cooked and crumbled
- Chop 1/2 cup green onions
- vegetable oil, for greasing

Step 1.
Preheat the oven to 375°F. While the oven heats, wash and scrub 7 jumbo baking potatoes under cool water.

Step 2.
Place the potatoes in a casserole dish and bake for about 65 minutes, until tender. Remove from the oven and let the potatoes cool. Reduce the oven temperature to 350°F.

Step 3.
In a large mixing bowl, scoop out the flesh of the cooled potatoes. Add 1½ cups sour cream, ½ cup (1 stick) softened salted butter, and 4 ounces cream cheese. Mix until well incorporated.

Sprinkle in 1 cup of the shredded cheddar cheese, half of the crumbled bacon (reserve the rest), and all but 1 tablespoon of the chopped green onions (reserve that tablespoon). Stir to combine, then add 2 teaspoons garlic powder, 2 teaspoons kosher salt, and 1 teaspoon ground black pepper. Mix well.

Lightly oil a 9-by-13-inch baking dish. Transfer the potato mixture to the dish and smooth it out evenly. Sprinkle the remaining 1 cup shredded cheddar cheese, remaining bacon, and remaining 1 tablespoon green onions on top.
