Gather these ingredients — no prep needed yet.

  • 7 jumbo baking potatoes
  • 1 1/2 cup sour cream
  • 1/4 lbs cream cheese
  • 2 cup shredded cheddar cheese
  • 2 tsp garlic powder
  • 2 tsp kosher salt
  • 1 tsp ground black pepper

Prepare

  • Soften 1/2 cup salted butter
  • 8 thick-cut bacon, cooked and crumbled
  • Chop 1/2 cup green onions
  • vegetable oil, for greasing

Let's Cook

  1. Step 1.

    Preheat the oven to 375°F. While the oven heats, wash and scrub 7 jumbo baking potatoes under cool water.

  2. Step 2.

    Place the potatoes in a casserole dish and bake for about 65 minutes, until tender. Remove from the oven and let the potatoes cool. Reduce the oven temperature to 350°F.

  3. Step 3.

    In a large mixing bowl, scoop out the flesh of the cooled potatoes. Add 1½ cups sour cream, ½ cup (1 stick) softened salted butter, and 4 ounces cream cheese. Mix until well incorporated.

  4. Step 4.

    Sprinkle in 1 cup of the shredded cheddar cheese, half of the crumbled bacon (reserve the rest), and all but 1 tablespoon of the chopped green onions (reserve that tablespoon). Stir to combine, then add 2 teaspoons garlic powder, 2 teaspoons kosher salt, and 1 teaspoon ground black pepper. Mix well.

  5. Step 5.

    Lightly oil a 9-by-13-inch baking dish. Transfer the potato mixture to the dish and smooth it out evenly. Sprinkle the remaining 1 cup shredded cheddar cheese, remaining bacon, and remaining 1 tablespoon green onions on top.

  6. Step 6.

    Bake the dip uncovered at 350°F for 30 minutes, until hot and bubbly. Serve with your favorite chips.
