Step 1.
Rinse the dried green or brown lentils under cold running water in a fine-mesh strainer, then drain well.

Place the rinsed lentils in a medium saucepan and add about 4 cups of water, or enough to cover the lentils by about 2 inches.

Bring the water to a boil over high heat, then reduce the heat to low to maintain a gentle simmer. Cook for about 45 minutes, stirring occasionally, until the lentils are tender but not mushy. Check the water level periodically and add more water if needed to keep the lentils submerged.

Drain any excess water from the cooked lentils in a colander, then return them to the saucepan. Stir in a pinch of sea salt while the lentils are still warm.
