Ingredients
- 3 tablespoons cold water
- 1 envelope (2 ¼ teaspoons) unflavored gelatin
- 1 ⅓ cups boiling water
- ¾ cup sugar
- ¼ teaspoon salt
- ⅓ cup strained lemon or lime juice
- (1 teaspoon grated lemon or lime zest)
- 1 Whipped Cream or Crème Anglaise (opens in new tab)

Gather these ingredients - no prep needed yet.
- 3 tablespoons cold water
- 1 envelope (2 ¼ teaspoons) unflavored gelatin
- 1 ⅓ cups boiling water
- ¾ cup sugar
- ¼ teaspoon salt
- ⅓ cup strained lemon or lime juice
- (1 teaspoon grated lemon or lime zest)
- 1 Whipped Cream or Crème Anglaise
Let's Cook

Step 1.
Pour into a medium bowl: 3 tablespoons cold water

Sprinkle over the top: 1 envelope (2 ¼ teaspoons) unflavored gelatin

Let stand for 5 minutes. Add and stir to dissolve the gelatin: 1 ⅓ cups boiling water

Step 4.
Add and stir until dissolved: ¾ cup sugar; ¼ teaspoon salt

Step 5.
Add: ⅓ cup strained lemon or lime juice

Step 6.
Pour the mixture into a wet 3- to 4-cup mold. Refrigerate until set, about 4 hours. If desired, when the mixture is set to the thickness of unbeaten egg whites, stir in: (1 teaspoon grated lemon or lime zest)

Unmold and serve with: Whipped Cream or Crème Anglaise
