- 12 oz boneless, skinless chicken breasts, cut into 2-inch pieces
- 4 oz cream cheese, at room temperature
- 1 cup peas, thawed if frozen
- 1/2 cup Parmesan cheese, finely grated
- Grate 2 tsp lemon zest
- 1 tbsp fresh tarragon, finely chopped

Step 1.
Heat 2 tablespoons extra virgin olive oil in a large, deep skillet over medium-high heat. Season 12 ounces boneless, skinless chicken breasts (cut into 2-inch pieces) with ¼ teaspoon each kosher salt and pepper. Cook the chicken until golden brown on all sides, 4 to 5 minutes, then transfer to a large bowl.

Add ¼ cup lemon juice to the skillet and scrape up any brown bits from the bottom. Pour the lemon juice over the chicken in the bowl.

Add 4 cups low-sodium chicken broth and 12 ounces gemelli or other short pasta to the skillet. Bring to a boil, then reduce the heat and simmer, stirring often, for 10 minutes.

Return the chicken and any accumulated juices to the skillet. Continue cooking until the pasta is just tender, about 3 minutes more.

Add 4 ounces cream cheese (at room temperature) to the skillet, stirring until melted. Fold in 1 cup peas (thawed if frozen), ½ cup finely grated Parmesan cheese, 2 teaspoons grated lemon zest, and 1 tablespoon finely chopped fresh tarragon. Serve immediately.
