Let's Cook

  1. Step 1.

    In a bowl or jar, combine 60 g rolled oats, 150 ml skimmed milk, 25 g vanilla whey protein, and 10 g chia seeds. Stir well with a spoon until the whey is fully dissolved and no dry pockets of oats or chia remain, scraping down the sides of the bowl. The mixture will look loose and wet at this stage, which is normal.

  2. Step 2.

    Cover the bowl or seal the jar and refrigerate overnight, or for at least 4 hours, so the oats soften and the chia seeds gel and thicken the mixture. If you think of it, give it a quick stir about 30 minutes in to prevent the chia from clumping at the bottom.

  3. Step 3.

    In the morning, remove the oats from the fridge and stir the mixture well; it should be thick and creamy. Fold through half of the 200 g 0% Greek yogurt (about 100 g) until evenly combined, loosening the oats to a spoonable consistency.

  4. Step 4.

    Spoon the oat mixture into a bowl or glass, then top with the remaining Greek yogurt. Scatter over the 100 g mixed berries, drizzle with the 10 g almond butter, and finish with the ½ tsp cinnamon and fresh lemon zest. Eat right away while the oats are still chilled.
