Let's Cook
-
Step 1.
Place the beef in the freezer for 30–45 minutes, until firm enough to slice thinly but not frozen solid. This makes it easier to cut uniform slices.
-
Step 2.
While the beef firms, mix the soy sauce, grated pear, sugar or honey, sesame oil, garlic, spring onion, sesame seeds, and pepper in a bowl. Stir until the sugar dissolves and the marinade is well combined.
-
Step 3.
Remove the beef from the freezer and slice across the grain into approximately 2–3 mm thick slices. If the beef becomes too soft, return it to the freezer for a few minutes to firm up again.
-
Step 4.
Toss the beef slices with the marinade until evenly coated. Cover the bowl and refrigerate for 1–3 hours to let the flavors penetrate.
-
Step 5.
While the beef marinates, prepare your grill for high heat. If using charcoal, light the coals and let them burn until they are covered with white ash and very hot. If using a gas grill, preheat to high. Also, cook rice and prepare lettuce and ssamjang for serving.
-
Step 6.
Remove small portions of beef from the marinade, allowing excess liquid to drip off. This prevents the marinade from burning and ensures better browning.
-
Step 7.
Grill the beef over high heat for approximately 30–60 seconds per side, adjusting for thickness, until browned and cooked to your preference. Work in batches to avoid overcrowding the grill.
-
Step 8.
Serve immediately with rice, lettuce, and ssamjang.
