Korean BBQ Shichirin — Complete Dinner For Two
1h 0m prep 30m cook 3h ready
This is a substantial Korean BBQ dinner for two, but the portions are well suited to progressive charcoal grilling. Most of the meat is relatively lean, while the pork belly provides a richer finish. The combination of ssamjang, kimchi, cucumber salad, and fresh lettuce also creates enough variation that the three proteins feel like distinct courses rather than one large mixed grill. For our Shichirin cookbook, this becomes Korean BBQ Shichirin — Dinner for Two, using the same recipe, shopping list, preparation schedule, and cooking-sequence format as the Malta Seafood dinner.

-
Step 1.
Rinse the rice thoroughly and cook according to the package.
-
Step 2.
Allow it to rest covered for 5–10 minutes before serving.
-
Step 3.
Separate lettuce leaves, wash, and dry thoroughly.
-
Step 4.
Place rice, lettuce, kimchi, and optional chilli and garlic in separate serving bowls.
-
Step 5.
Keep the rice warm throughout dinner.
-
Step 6.
Opening — Bulgogi and lettuce wraps Start with a few thin slices of bulgogi over high heat. Serve immediately with rice, lettuce, ssamjang, and kimchi. Continue grilling small batches rather than cooking all 250 g at once.
-
Step 7.
Grilled mushrooms, onion, and garlic Begin with the onions and whole garlic, which need more time. Add the mushrooms and spring onions as space becomes available. Serve with ssamjang or include in lettuce wraps.
-
Step 8.
Sesame-garlic pork tenderloin Grill medallions over medium-high heat, turning until evenly browned and cooked through. Let the pork rest briefly before eating. Try some with the sesame-salt dipping sauce.
-
Step 9.
Crispy pork belly finale Allow the heat to moderate slightly. Grill pork belly in small batches, turning frequently until rendered and crisp. Serve with sesame-salt sauce, kimchi, and cucumber salad.
-
Step 10.
Final lettuce wraps Finish any remaining rice, grilled vegetables, and meat in small lettuce wraps with ssamjang. This is an informal closing course rather than an additional protein serving.
