Let's Prepare

Collect

Gather these ingredients - no prep needed yet.

  • 2 tbsp canola oil
  • 1/2 lb frozen corn kernels
  • 1/4 cup mustard
  • 1/4 cup ketchup
  • 1/4 cup barbecue sauce
  • 3 tbsp hot sauce (like sriracha)

Prepare

  • Dice 1 small onion
  • Dice 1 green or red pepper
  • 1 lb extra firm tofu, rinsed and diced

Let's Cook

  1. Step 1.

    Heat 2 tablespoons canola oil in a wok or large skillet over high heat until shimmering.

  2. Step 2.

    Add the diced onion (and diced green or red pepper, if using) and stir-fry for about 2 minutes, until the onion is translucent and slightly softened.

  3. Step 3.

    Add the rinsed and diced extra firm tofu to the wok or skillet and stir-fry for another minute, allowing the tofu to brown slightly.

  4. Step 4.

    Add ½ pound frozen corn kernels, ¼ cup mustard, ¼ cup ketchup, ¼ cup barbecue sauce, and 3 tablespoons hot sauce (like sriracha, or to taste). Stir well to combine all ingredients.

  5. Step 5.

    Cook the mixture, stirring occasionally, until everything is heated through, about 5 minutes. Serve hot.
