Kachumber
A fresh Indian salad with onions, tomatoes, cucumber, and a tangy lime dressing. Perfect as a side dish or wrapped in puris.
Ingredients
- 1 onion chopped
- 2 large tomatoes chopped
- 0.5 cucumber cut into 1cm/½ inch pieces
- 29.6 ml sprouting beans of any sort
- 44.4 ml canned sweetcorn
- 0.5 green pepper deseeded and cubed
- 0.5 red or yellow pepper deseeded and cubed
- fresh root ginger peeled and finely chopped
- 1 green chilli chopped
- 2 garlic cloves finely chopped
- 44.4 ml lime juice
- 4.93 ml salt
- 9.86 ml ground cumin lightly toasted in a dry pan
- 2.46 ml chilli powder

Prepare
- Chop 1 onion
- Chop 2 large tomatoes
- 0.5 cucumber, cut into 1cm/½ inch pieces
- 0.5 green pepper, deseeded and cubed
- 0.5 red or yellow pepper, deseeded and cubed
- fresh root ginger, peeled and finely chopped
- Chop 1 green chilli
- 2 garlic cloves, finely chopped
- 9.86 ml ground cumin, lightly toasted in a dry pan

Step 1.
Chop the onion, tomatoes, cucumber, green pepper, and red or yellow pepper as specified. Finely chop the ginger, green chilli, and garlic cloves. Lightly toast the ground cumin in a dry pan over medium heat for about 30 seconds until fragrant, then set aside.

Step 2.
In a large bowl, combine the chopped onion, tomatoes, cucumber, sprouting beans, canned sweetcorn, green pepper, red or yellow pepper, ginger, green chilli, and garlic.

Add the lime juice, salt, toasted ground cumin, and chilli powder to the bowl. Mix all ingredients together until well combined. Taste and adjust salt or lime juice if desired.

Serve immediately as a salad alongside a main course, or with puris to make kachumber salad wraps. If making a day ahead, omit the lime juice until just before serving.
