Step 1.
Prepare the fried potato wedges according to your favorite recipe and keep them warm.

Warm a splash of olive oil in a skillet over medium heat. Add sliced onions and sliced bell peppers, and cook, stirring occasionally, for about 8 to 10 minutes, or until soft and translucent.

While the onions and peppers cook, deep-fry 2 all-beef hot dogs according to your preferred method until heated through and slightly crisp.

While the hot dogs are cooking, use a sharp knife to cut a slit down the center of a pizza bread or Italian roll to create a pocket; do not cut all the way through.

Place the cooked hot dogs into the bread pocket. Add a line of ketchup on top, if desired.

Top the hot dogs with a generous pile of the warm fried potato wedges and the cooked onions and peppers.
