- 4.93 ml ground cinnamon
- 2.46 ml cayenne pepper
- 1 Basic Sugar or Chocolate glaze

Step 1.
Prepare one batch of Chocolate Cake dough according to the recipe directions, adding 1 teaspoon ground cinnamon and ½ teaspoon cayenne pepper to the dry ingredients before mixing.

Roll out the dough on a lightly floured surface to about ½-inch thickness. Cut out doughnuts using a doughnut cutter or two round cutters (one large, one small for the hole).

Heat oil in a deep fryer or large heavy pot to 350°F (175°C). Fry the doughnuts in batches, about 1–2 minutes per side, until golden brown and puffed. Transfer to a wire rack to drain and cool slightly.

While the doughnuts are still warm, prepare one batch of Basic Sugar or Chocolate glaze. For extra heat, stir a pinch of cayenne pepper into the glaze.

Dip the tops of the slightly cooled doughnuts into the glaze, letting excess drip off. Place glazed doughnuts on a wire rack to set for about 10 minutes before serving.
