Himalayan Cheese ON Toast
A popular Mowgli dish featuring melted cheddar cheese on toast, spiced with cumin, coriander, onion, and green chilli. The combination of herbs and spices adds a fresh, floral note that balances the rich cheese.
Ingredients
- 4.93 ml vegetable oil
- 2.46 ml cumin seeds
- 50 g extra-mature cheddar cheese grated
- 2.46 ml ground coriander
- 1.23 ml ground cumin
- 0.5 small red onion finely diced
- 1 small green chilli deseeded and finely sliced
- 14.8 ml fresh coriander/cilantro roughly chopped
- 2.5 thick piece of white bread

Prepare
- Grate 50 g extra-mature cheddar cheese
- 0.5 small red onion, finely diced
- 1 small green chilli, deseeded and finely sliced
- 14.8 ml fresh coriander/cilantro, roughly chopped

Step 1.
Preheat your grill/broiler to high. Place a small non-stick saucepan over medium heat and add 1 tsp vegetable oil. When the oil is hot, add ½ tsp cumin seeds and fry for about 30 seconds until they turn dark brown and become fragrant. Immediately remove the pan from the heat and set the fried cumin seeds aside.

Step 2.
In a small bowl, combine 50g grated extra-mature cheddar cheese, ½ tsp ground coriander, ¼ tsp ground cumin, ½ finely diced small red onion, 1 deseeded and finely sliced small green chilli, 1 tbsp roughly chopped fresh coriander, and the fried cumin seeds. Mix well with a fork until evenly distributed.

Step 3.
Place a 2.5cm thick slice of white bread on a baking sheet. Toast under the grill for about 1 minute per side, until lightly golden but not burnt. Watch carefully to avoid over-browning.

Step 4.
Carefully sprinkle the cheese mixture evenly over one side of the toasted bread. Return the baking sheet to the grill and cook for about 3 minutes, until the cheese is bubbling and golden brown on top.

Sprinkle a little extra fresh coriander over the melted cheese and serve immediately.
