  • 2.46 ml fine sea salt
  • freshly squeezed lemon juice
  • 88.7 ml Avocado Aioli
  • Freshly ground black pepper
  • 14.8 ml capers
  • 1 egg yolk
  • 2.46 ml Dijon mustard
  • 9.86 ml freshly squeezed lemon juice
  • 118 ml avocado oil
  • Fine sea salt
  • freshly ground black pepper

Prepare

  • 4 Whole Grain Sourdough English Muffins, split
  • 8 Havarti cheese, thin
  • 8 ripe heirloom tomato, thin
  • Peel 1 clove garlic

Let's Cook

  1. Step 1.

    Preheat the oven broiler. Line a baking sheet with parchment paper.

  2. Step 2.

    In a small mixing bowl, add the tuna and break it apart with a fork. Taste the tuna to gauge saltiness; add ½ teaspoon fine sea salt if the tuna seems bland.

  3. Step 3.

    Fold in 4 to 5 teaspoons lemon juice, 6 tablespoons Avocado Aioli or mayonnaise, and freshly ground black pepper to taste. Add 1 tablespoon capers (for saltier) or sweet pickle relish (for sweeter), and stir to combine. Taste again and adjust lemon juice and salt as desired.

  4. Step 4.

    Lightly toast the split English muffin halves under the broiler or in a toaster until just golden, not fully browned. Place the muffin halves on the prepared baking sheet.

  5. Step 5.

    Divide the tuna salad equally among the muffin halves. Top each with a slice of Havarti cheese, then a slice of heirloom tomato on top of the cheese. Grind black pepper over each tomato slice.

  6. Step 6.

    Place the baking sheet under the broiler and broil for 2 minutes, checking after 1 minute. Broil until the cheese is fully melted and starting to bubble at the edges. Serve immediately.
