Prepare

Let's Cook

    Heat a grill to medium heat.

    In a blender or food processor, combine 1 ounce feta cheese, 3½ tablespoons olive oil, 1½ tablespoons nonfat plain Greek yogurt, 1 tablespoon fresh lemon juice, ½ small clove garlic, and a pinch each of kosher salt and pepper. Puree until smooth. Transfer the dressing to a medium bowl and stir in 1½ tablespoons chopped fresh dill.

    Cut 1 romaine lettuce heart in half lengthwise. Place the halves cut-side down on the grill and cook until charred in spots, about 2 minutes. Flip and grill the other side for another 2 minutes.

    Transfer the grilled romaine to a serving plate. Drizzle with the creamy dill dressing and sprinkle with 1½ tablespoons roasted sunflower seeds. Serve immediately.
