Grilled Or Broiled Whole Fish

4 servings Please read About Grilling and Broiling Fish. Trout, mackerel, and black cod (sablefish) are good choices; their scales are practically nonexistent. If you do not have your heart set on eating the skin, there is no need to scale other fish. Another option that quickens cooking and results in boneless fish: Butterfly them and cook entirely skin side down. To grill larger fish, build a two-zone grill fire, cook over the coals on both sides as directed, then move the fish off to the side of the coals. Cover and cook until the internal temperature reaches 125° to 130°F.

Ingredients

  • Four 1- to 1½-pound whole fish, such as mackerel, trout, or black cod (sablefish)
  • 1 tablespoon vegetable oil
  • Salt and black pepper
  • 1
    • 1 cup packed fresh parsley leaves
    • ½ cup extra-virgin olive oil
    • 3 tablespoons drained capers
    • (Up to 6 anchovy fillets)
    • 2 garlic cloves, chopped
    • 1 tablespoon red wine vinegar or lemon juice
    • ½ teaspoon whole-grain mustard
    • (½ teaspoon red pepper flakes)
    • Salt to taste
    Sub-recipe steps
    1. Combine in a food processor: 1 cup packed fresh parsley leaves; ½ cup extra-virgin olive oil; 3 tablespoons drained capers; (Up to 6 anchovy fillets); 2 garlic cloves, chopped; 1 tablespoon red wine vinegar or lemon juice; ½ teaspoon whole-grain mustard; (½ teaspoon red pepper flakes); Salt to taste
    2. Blend to a uniform consistency, but do not process to a puree. Adjust the seasonings. The sauce will keep, covered and refrigerated, for up to 1 week. Serve at room temperature.

Let's Cook

  1. Step 1.

    If necessary, scale and prepare for cooking: Four 1- to 1½-pound whole fish, such as mackerel, trout, or black cod (sablefish)

  2. Step 2.

    Prepare a medium-hot grill fire, or preheat the broiler (with an oven rack 6 inches from the heating element). Pat the fish dry and brush with: 1 tablespoon vegetable oil

  3. Step 3.

    Sprinkle inside and out with: Salt and black pepper

  4. Step 4.

    To grill, place the fish on the grill over direct heat for 5 minutes, then carefully turn the fish and cook until done, about 10 minutes more. To broil, set the fish on an oiled rimmed baking sheet and place under the broiler. Broil the fish, turning once, until firm and opaque throughout and browned on both sides, about 10 minutes total.

  5. Step 5.

    The internal temperature should be 125° to 130°F. Serve immediately with: Lemon wedges, Salsa Verde, or Charmoula
