  • 3 tbsp mild hot sauce
  • 3 tbsp honey
  • 1 tbsp seasoning salt
  • 1/2 tsp coarse black pepper
  • 1/2 tsp red pepper flakes
  • nonstick cooking spray

Prepare

  • Mince 1 small onion
  • Mince 10 garlic cloves
  • Pat 2 lbs thin lamb chops dry
  • 2 sprig fresh rosemary, leaves stripped and chopped

Let's Cook

  1. Step 1.

    In a medium mixing bowl, whisk together ¼ cup extra-virgin olive oil, 3 tablespoons mild hot sauce, and 3 tablespoons honey until well combined. Stir in 1 small minced onion, 10 minced garlic cloves, 1 tablespoon seasoning salt, ½ teaspoon coarse black pepper, and ½ teaspoon red pepper flakes (if using). Pour the marinade into a large freezer bag.

  2. Step 2.

    Add 2 pounds thin lamb chops (patted dry) and 2 sprigs of fresh rosemary (leaves stripped and chopped) to the bag. Shake to distribute everything and coat the lamb. Refrigerate for a minimum of 4 hours, or overnight.

  3. Step 3.

    Remove the bag from the refrigerator and let the lamb come to room temperature, about 30 minutes.

  4. Step 4.

    While the lamb comes to room temperature, heat a large grill pan over medium-high heat until nice and hot. Spray with nonstick cooking spray.

  5. Step 5.

    Grill a few lamb chops at a time until browned and grill marks appear, 8 to 9 minutes on each side for medium-rare. Transfer to a platter and serve with your favorite sides.
