Let's Prepare

Collect

Gather these ingredients - no prep needed yet.

  • 14.8 ml vegetable oil
  • 4.93 ml ground turmeric
  • 9.86 ml salt
  • 300 ml water

Prepare

  • 1 curry leaves, leaves stripped from stalk
  • 50 g unsalted peanuts, roughly chopped
  • Juice 0.5 lemon
  • 150 g basmati rice, washed and drained

Let's Cook

  1. Step 1.

    Heat a medium saucepan over medium-low heat. When hot, add 1 tbsp vegetable oil (or ghee) and the curry leaves (about 10 leaves stripped from the stalk). Once they're sizzling, add 1 tsp ground turmeric, 50g roughly chopped unsalted peanuts, and the juice of ½ lemon. Stir to combine.

  2. Step 2.

    Add 150g washed and drained basmati rice and 2 tsp salt (or to taste) to the saucepan. Pour in 300ml water, then bring to a boil over high heat. Once boiling, reduce the heat to low, cover the pan, and simmer for 10–12 minutes, or until all the water has been absorbed. Remove from the heat and let the rice steam, covered, for 5 minutes.

  3. Step 3.

    Fluff the rice with a fork and serve with your favourite curry.
