- 4 pork and fennel sausages, cut into 2½cm/1in pieces
Let's Cook
-
Step 1.
Heat the olive oil in a large pan over medium heat. Add the garlic and cook, stirring continuously, for about 2 minutes until softened but not colored.
-
Step 2.
Add the tomato purée, chopped tomatoes, red wine, and sugar to the pan. Stir to combine, then bring to a boil. Reduce to a simmer and cook for about 5 minutes, until the oil rises to the surface and pools around the edges of the sauce.
-
Step 3.
While the sauce simmers, bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions, about 10–12 minutes, until tender.
-
Step 4.
Add the sausage pieces and meatballs to the sauce. Stir to combine, then let cook for 12 minutes, until the meat is cooked through and the sauce has thickened and reduced.
-
Step 5.
Drain the spaghetti, reserving a ladleful of pasta water. Add the reserved pasta water to the sauce and stir. Divide the spaghetti among serving bowls, then spoon the sauce, meatballs, and sausages over the top. Serve hot.
