Prepare

  • Soften 113 g goat cheese

Let's Cook

  1. Step 1.

    In a small bowl, whisk together 2 large eggs, ⅓ cup whole milk, and ¼ teaspoon salt until well combined. Set aside. Heat a large nonstick skillet over medium heat.

  2. Step 2.

    For each sandwich, spread 2 tablespoons softened goat cheese onto one slice of bread, then spread 1 tablespoon hot red pepper jelly over the goat cheese. Top with 2 thick slices of roasted turkey and another slice of bread. If desired, trim the crusts from the assembled sandwich. Generously brush the top of each sandwich with the egg mixture.

  3. Step 3.

    Add 2 tablespoons unsalted butter to the hot skillet; when it is melted and sizzling, place the sandwiches in the skillet, egg side down. Brush the top of each sandwich with the remaining egg mixture. Cook for 3 to 4 minutes, until the bottom is golden brown. Flip the sandwiches and cook for another 3 to 4 minutes, until both sides are golden brown and the cheese is melted. Cut each sandwich in half diagonally and serve immediately.
