Glacier Bay Granola
A hearty granola packed with oats, nuts, coconut, and dried fruits. Perfect for breakfast or snacking, customizable with your favorite add-ins.

Prepare
- Chop 454 g nuts, such as pecans, walnuts, or cashews
- Chop 113 g dried apples
- Chop 113 g dried apricots

Step 1.
Preheat the oven to 350°F.

In a medium saucepan over low heat, combine ½ cup canola oil, ½ cup light brown sugar, ½ cup honey, 2 tablespoons molasses, 1 tablespoon vanilla extract, and ½ teaspoon kosher salt. Stir until well combined and the sugar is dissolved, about 2-3 minutes. Remove from heat.

Step 3.
In a large bowl, toss together 8 cups rolled oats, 1 pound chopped nuts (such as pecans, walnuts, or cashews), 2 cups unsweetened coconut flakes, 8 ounces wheat germ, and ¼ cup flax meal or seeds.

Pour the warm oil mixture over the oat mixture and stir thoroughly until all dry ingredients are evenly coated.

Spread the granola mixture in a thin, even layer on 2 large baking sheets. Bake for 20 to 25 minutes, stirring every 5 to 10 minutes to ensure even browning. The granola is done when golden brown and fragrant.

Remove from the oven and let the granola cool completely on the baking sheets, about 30 minutes. While the granola cools, prepare the dried fruit: chop 4 ounces dried apples and 4 ounces dried apricots if not already chopped.

Once the granola is cool, stir in 4 ounces dried raisins or cherries, the chopped dried apples, and chopped dried apricots. Optionally, add sunflower seeds, pumpkin seeds, dried blueberries, or cacao nibs to taste.

Transfer the finished granola to quart jars or an airtight container. Store in a cool, dry place for up to 1 month.
